Slicing the tuna


 
   

We finally hit the REAL Tsukiji Fish Market and it was well worth the trip. It is a loud and hectic place, carts and forklifts zip by every second, and the floor is as slippery as...well...a fish. Here, the experts gut and slice a very large tuna (well worth watching, Art!!!)--Matt

Ahi refers to two species, bigeye tuna (Thunnus obesus) and yellowfin tuna (Thunnus albacares). In Hawaii, shibi is another name for yellowfin tuna. The yellowfin gains its name because the soft dorsal and anal fins and finlets are bright yellow in color. The dorsal and anal fins lengthen with age. Yellowfin range from the ocean surface to depths below 100 fathoms.

kudos to the japanese for the repect they give to the fish. i fish off southern california and our deckies waste way too much when they filet, imho
